Quick Beef O’Brien Hash Breakfast Recipe

As I have gotten older, I don’t have the sweet tooth or time that I used to have for weekend breakfasts. This is a quick throw-together breakfast that takes little effort and has just the right amount of seasoning to give it that something extra.

I have also thrown this one together for dinner or ahead of time to take to work for breakfast due to its ability to reheat very well in the microwave. This is another one I picked up from my uncle, except he would use fresh chives and Tony Chachere’s. I go with freeze-dried chives because I always have some in the pantry, but fresh will taste better.

One of the things I like most about this dish is you can add more Slap Ya Mama straight to the bowl after serving for the family members like me who enjoy more kick. Alternatively, if everyone enjoys some kick, you can use Slap Ya Mama Hot Blend instead (or just add to your own bowl after serving).

I highly recommend Ninja’s newer line of pots and pans since you don’t have to hand wash and they cook like a cast iron skillet. You can even use them in the oven!

Quick Beef O’Brien Hash Breakfast Recipe

Ingredients

  • 1 28 oz. bag of Ore-Ida Potatoes O’Brien

  • 1 lb ground beef

  • 2 tsp freeze-dried chives

  • 1.5 tsp Slap Ya Mama Cajun Seasoning

Directions

  • Start cooking potatoes O’Brien and 2 tsp chives in 5-Quart sauté pan with lid over medium-high heat for 22 minutes, flipping with a spatula carefully to avoid smashing potatoes every 4 minutes.
  • While potatoes are cooking, put ground beef in pot with 1.5 tsp of Slap Ya Mama seasoning and cook until brown.
  • When both are finished cooking, combine by folding the beef in with spatula, being careful to not smash the potatoes.

Notes

  • In case you missed it, you have to be very careful not to smash the potatoes when stirring or adding the beef. The texture will be mushy and overcooked if you’re not careful!
