Indulgent Dairy and Soy-Free Pancakes

Adulting with work and kids can get crazy sometimes. Mornings are especially chaotic as it seems everyone is cranky about being awake. Nothing fixes and sweetens mornings as much as starting off the day with some good pancakes and bacon. If you’re doing bacon before the pancakes, you can even use the bacon grease on the pan in lieu of butter for extra richness. Since our newest member of the family has a dairy and soy intolerance, these are dairy and soy-free! These pancakes are as easy to make as following the instructions on a box of Bisquick but definitely more delicious!  

Indulgent Allergy-Friendly Pancakes

These indulgent dairy and soy free pancakes are a sweet way to start your day without worrying about dairy or soy!

Ingredients

  • 2 cups of flour

  • 1/3 cup of sugar

  • 4 1/2 teaspoons of baking powder

  • 1/2 teaspoon of salt

  • 1 3/4 cups of oat milk*

  • 1/4 cup of Smart Balance Buttery Spread*

  • 2 teaspoons of real Mexican vanilla

  • 1 large egg**

  • ½ cup of Nestle Allergen Free Semi-Sweet Morsels*

Directions

  • Combine dry ingredients and mix with a whisk
  • Add wet ingredients and mix with a whisk until everything is blended together well
  • Fold in chocolate chips
  • Using an extra large spoon, spoon onto a preheated medium heat pan that’s coated with Smart Balance spread or bacon grease. When pancakes start to bubble, go ahead and flip. (30-120 seconds depending on stove)
  • Add additional Smart Balance to the top of pancakes if desired and cook for same amount of time it took before you flipped. 
  • Serve with your favorite pancake syrup and enjoy!

Notes

  • To reheat just throw on preheated medium heat pan for about a minute per side. You can microwave, but stove top is just as quick and they don’t get the microwave pancake feel.
  • You could also do ¼ cup of chocolate chips and ¼ cup of chopped pecan if you like some nut in your pancakes. Make it your own by adding any favorite topping!
  • *If you are not worried about dairy or soy, feel free to substitute these ingredients for regular milk, butter, and chocolate chips.
  • **If you have an egg allergy, you can substitute the egg for 1/4 cup of applesauce, but replace the extra 1/2 teaspoon of baking powder for a 1/2 teaspoon of baking soda to keep the pancakes fluffy.
